Blackberry Lemon Muffins

These delectable delights are almost the equivalent of a summer day in your mouth. The natural sweetness from fresh blackberries with a lemon-ey zing may entice you to have them for breakfast, lunch, and dinner!

Ingredients needed:
  • 1/2 cup butter, softened
  • 1/2 cup of honey
  • 3 large eggs
  • 1 cup lemonade
  • 1/2 teaspoon Lemon essential oil or 3 Tablespoons of lemon juice
  • 1 1/2 cups flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon cinnamon
  • 1 cup blackberries
  • 1 1/4 cups shredded coconut

Preheat your oven to 350 degrees Fahrenheit. Grease or line your muffin tin.

Cream together butter and honey then add eggs, lemonade, and either Lemon essential oil or lemon juice and mix.

Add the dry ingredients and mix thoroughly. Fold in blackberries and 1 cup of coconut.

Fill muffin tins about 2/3 full of batter and top with remaining 1/4 cup of coconut.

Bake for 30-35 minutes. Serve warm or store in an airtight container in order to maintain maximum freshness.
